Beetroot and Chocolate cake with Avocado | Bolo de Chocolate e Beterraba com Abacate

Este bolo de chocolate não tem nada a ver com o bolo de chocolate comum. É um bolo de chocolate húmido, quase com textura de brownie e quase saudável.
Este é o bolo de chocolate com beterraba e abacate.

É impossível negar que obtive inspiração de tantos bolos de chocolate e beterraba que vagueiam pela internet. Sempre que via uma receita dessas sentia-me persuadida a fazer um bolo assim.
Mas a escolha do abacate teve outras origens.


This is a chocolate cake, but not the ordinary chocolate cake. There's no way this could fall into a common place. This is the extraordinarily moist, near-brownie and almost healthy chocolate cake.
This is THE beetroot and avocado chocolate cake.

I can't deny I got some inspiration from so many beetroot chocolate cakes rolling around on the internet. Everytime I saw a recipe like that I felt I was being persuaded to bake one.

But the avocado: that had a whole different source of inspiration.

Tenho visto muitos abacates este ano, por todo o lado. E por isso, um dia destes fui comprar uns quantos. Havia alguns um pouco menores que o "abacate comum" e achei que eram do tamanho ideal para fazer batidos ou bolos.

Mas porque escolhi abacate? A resposta é tão simples que nem me vou alongar muito: Gordura, mas da boa. E claro, o seu sabor neutro.
E de facto, este bolo nem leva manteiga, nem margarina, nem sequer banha - apenas 100% de gordura vegetal natural na sua forma original.

There are lots of avocados this year. I see them everywhere, and one of these days I decided to buy some. Some of them were a little smaller than average and I just thought they were the right size to include in smoothies or in cakes.

Why did I choose avocado? The answer is too simple and I will keep it short: FAT. Healthy fat. And of course, it's neutral flavour.
Actually this cake has no butter, no shortening, no lard - 100% natural vegetable fat in it's original form.

Há outro ingrediente potencialmente surpreendente para algumas pessoas: azeite virgem extra. É verdade que tem um sabor pronunciado, mas depois de o bolo estar feito, não vão sentir nem o mínimo travo a azeite. E vou partilhar o meu segredo: normalmente os meus brownies são feitos apenas com azeite e ficam maravilhosos.

There's another ingredient that might surprise some of you: extra virgin olive oil. Yes, it has a strong flavour, but let me tell you: there's no hint of it on the cake. Let me share another secret with you: I only use olive oil when I make brownies and they taste delicious.

O único crime deste bolo? O açúcar.
The only villain in this cake: sugar.

Without further ado, the recipe:

Ingredientes:

3 ovos
100 g de açúcar amarelo
100 g de açúcar branco
100 g de abacate
50 ml de azeite
250 g de beterraba crua, descascada e ralada
100 g de farinha com fermento
50 g de farinha de aveia
6 c. de sopa de cacau
1 c. de chá de fermento para bolos
pitada de sal

Ingredients:

3 eggs
100 g brown sugar
100 g white sugar
100 g avocado, mashed
50 ml olive oil
250 g raw beetroot, peeled and grated
100 g self-raising flour
50 g oat flour
6 tbsp of cocoa
1 tsp baking powder
pinch of salt


Preparação:

Preparem uma forma com manteiga (ou outro tipo de gordura) e farinha.
Aqueçam previamente o forno durante 15 min a 170ºC.

Usem a batedeira após cada adição de ingredientes:

  • Batam os ovos com o açúcar (tanto o branco como o amarelo) até a mistura ficar fofa.
  • Adicionem o abacate esmagado (usei um garfo)
  • Adicionem o cacau
  • E depois o azeite
  • Misturem as farinhas, o fermento e a pitada de sal e adicionem à mistura
  • Por fim, adicionem as beterrabas raladas 

Method:


Prepare a cake pan with butter (or any other kind of grease) and flour.
Pre-heat the oven for 15 min at 170ºC.

Mix after every addition (I used a regular mixer) :

  • Beat the eggs with the sugar (both brown and caster) until it gets fluffy
  • Add the mashed avocado (I mashed it with a fork)
  • Add the cocoa
  • And then the olive oil
  • Combine the flours, the baking powder and a pinch of salt and add them to the mix
  • Finally, add the grated beets


Ao contrário de outros bolos de chocolate, este não queima com facilidade. Demora um pouco a assar. Contem com, pelo menos 40/50 minutos no forno.
Depois têm mesmo de verificar o bolo com um palito. Nunca há de sair completamente limpo, mas tem de sair o mais seco possível. A massa que sair no palito tem de estar seca, e não a escorrer, nem mole.

Unlike other chocolate cakes this one is hard to burn. It takes a while to bake. Count on - at least - 40/50 mins in the oven.
Then you'll have to check the cake with a toothpick. It will never come out absolutely clean, but as dry as possible is what you're looking for. The dough that comes in the toothpick has to be on the dry side, and not runny or too soft.



O bolo fica fofinho, macio e fica melhor com o passar do tempo. Uma coisa é comerem este bolo no dia em que o fazem. Outra coisa é comerem o bolo no dia a seguir e nos seguintes. Pois, porque este bolo de chocolate durou (porque fiz com que durasse, para testar, caso contrário não sobrava para contar a história) 6 dias sem se dar conta que era um bolo com tanto tempo. Nem foi ao frigorífico, nada. (E não sei se durava mais dias porque acabou)

This cake is so soft and smooth and it gets better as the days go by. It will have a different flavour on the day after you bake it. And what I really found incredible is that it remained in the "baked today" state for 6 days (and it was hard to keep a piece of the cake for that long. After that I ate it, so I don't really know how many days it would still be good).
